Ingredients

The main ingredients of this recipe are:

  • Flour: gluten-free all-purpose flour.
  • Butter: unsalted butter melted.
  • Sugar: white granulated sugar. You can also use brown sugar.
  • Milk: whole milk.
  • Peaches: yellow peaches sliced with skin. You can use white peaches too.
  • Lemon: fresh lemon juice

How to make GF peach cobbler

In a medium bowl whisk together the GF all-purpose flour, baking powder, salt, and sugar. Add the melted butter and the milk, and mix until incorporated.

Let rest covered in the refrigerator for at least 20 minutes.

In a large bowl toss the sliced peaches, sugar, lemon juice, and cornstarch. Transfer the mixture to a baking dish and let rest.

Preheat oven to 350°F (180°C).

Droop scoops of dough on top of the peach mixture.

Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.

Serve with a scoop of ice cream or whipped cream.

Storing

It’s best served immediately, warm, with a scoop of ice cream or whipped cream. Keep leftovers covered in the refrigerator for about 4 days. To reheat bake at 350°F (180°C) for about 15 minutes, or in the microwave warm as tasted.

  • Flour: you can try a different mix of GF flour, like adding almond flour to the crust.
  • Fruit: add another fruit to the filling, like strawberries or blueberries. They go very well with peaches.
