Ingredients
The main ingredients of this recipe are:
- Flour: gluten-free all-purpose flour and cornstarch for the fruit.
- Butter: unsalted butter, melted.
- Milk: whole milk.
- Plums: fresh ripe plums.
- Blueberries: fresh or frozen blueberries or mixed berries.
- Sugar: white granulated sugar for the batter and brown sugar for the fruit filling.

How to make plum and berry cobbler
Whisk together the GF all-purpose flour, baking powder, salt, and sugar in a medium bowl. Add the melted butter and the milk, and mix until incorporated.
Let rest covered in the refrigerator for at least 20 minutes.
In a large bowl, toss the sliced plums, berries, brown sugar, and cornstarch. Transfer the mixture to a baking dish and let it rest for 15 minutes.
Preheat oven to 375°F (190°C).
Droop scoops of dough on top of the plum mixture. Divide as evenly as possible, so that every portion has a scoop of dough.
Brush the dough with cream and sprinkle with 1 tablespoon of coarse sugar.

Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.
Serve warm with a scoop of vanilla ice cream or whipped cream.

Storing
Keep leftovers covered in the refrigerator for up to 4-5 days. To reheat the dessert, warm it in a medium oven for about 15 minutes.
Can I make cobbler ahead of time?
Yes, prepare the fruit filling and batter separately, and assemble and bake just before serving. If the fruit releases a lot of juice, squeeze some out.
Can I use frozen blueberries?
Yes, they work well in cobblers, but don’t thaw them. Thawed fruit releases a lot of juice, and the filling becomes too runny, watery.
Variations
- Fruit: replace the plums with peaches, strawberries, and so on. You need 1kg (2,2 lbs) of fruit for the recipe.
- Flour: Try a different mix of GF flour. Almond flour is a very good option.
- Lemon: add lemon zest for freshness.
- Serving options: serve the dessert warm with a scoop of ice cream or whipped cream.
- Spiced Cobbler: Feel free to play with spices; add ground cinnamon, ginger, or nutmeg to the fruit filling and add flavor.
