Peach Cobbler (Gluten-Free)

GF Peach Cobbler is the perfect Summer Dessert! It's fresh, with a juicy and rich peach filling, and brings colour to the table. Best serve warm with a scoop of ice cream.

Ingredients
  

For the crust

  • 1 and ¼ cup gluten-free all-purpose flour
  • ½ cup white granulated sugar
  • 1 and ½ teaspoons baking powder
  • Pinch of salt
  • cup milk
  • ¼ cup butter melted

For the filling

  • 2 lb peaches (1kg)
  • ½ cup white granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions
 

  • In a medium bowl whisk together the GF all-purpose flour, baking powder, salt and sugar. Add the melted butter and the milk, and mix until incorporated.
  • Let rest covered in the refrigerator for at least 20 minutes.
  • In a large bowl toss the sliced peaches, sugar, lemon juice and cornstarch. Transfer the mixture to a baking dish and let rest.
  • Preheat oven to 350°F (180°C).
  • Droop scoops of dough on top of the peach mixture.
  • Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.
  • Serve warm with a scoop of vanilla ice cream or whipped cream if desired.

Notes

It's best served immediately, warm, with a scoop of ice cream or whipped cream. Keep leftovers covered in the refrigerator for about 4 days. To reheat bake at 350°F (180°C) for about 15 minutes, or in the microwave warm as tasted.
