Baking tips

  • Pears: Choose ripe but firm pears to hold their shape while baking.
  • Crust: For the crust to be soft, don’t overmix the batter; mix gently.
  • Thickener: What’s the best thickener for the pear filling? Cornstarch and tapioca starch both work well.
  • Spices: Add a pinch of cinnamon or nutmeg for extra flavor.
  • Sweetness: adjust the sweetness of the pear filling to taste and the sweetness of your fruit.
  • Baking: Bake until the juices are bubbling and the topping is golden brown. Let the cobbler cool slightly before serving so the juices thicken.
  • Can I use canned pears instead of fresh pears? Yes, you can use canned pears, but drain them well to avoid excess liquid. Fresh, ripe pears give the best flavor and texture, but you can also use canned pears.

Variations:

  • Fruit: add other fruit, like blueberries or berries, to the pear filling.
  • Flour: Try a different mix of gluten-free flour, like almond flour or oatmeal, for a more rustic crust.
  • Spices: feel free to play with the spices. Add ground nutmeg, ginger, or cardamom for a strong and spiced flavor.
  • Citrus twist: add orange or lemon zest for a citrus version.

Serving Options

  • Individual ramekins: Bake the dessert in individual ramekins. Adjust baking time; it will be shorter for a smaller portion.
  • Whipped cream: serve the cobbler warm with whipped cream, classic.
  • Ice cream: for a sweet treat, serve warm with a scoop of vanilla ice cream.
