Ingredients
The main ingredients for this recipe are:
- Rice: Short-grain white rice is the same rice used to make a risotto.
- Milk: whole milk for the best consistency and flavor.
- Orange: fresh orange peels to add flavor. You can also use lemon peel.
- Cinnamon: a cinnamon stick to flavor and ground cinnamon to sprinkle on top.
- Plums: fresh ripe plums with peel.

How to make old-fashioned rice pudding
For the rice pudding:
In a deep saucepan, place the rice, milk, cinnamon stick, and the orange peels over high heat and bring to a boil.
Reduce the heat to low and cook the rice in the milk, stirring often, until it is almost ready. When it’s almost ready, add the sugar and let cook for about two minutes. If it is necessary, add a little more milk; it should be creamy.

Let cool or serve immediately with the plum sauce. Sprinkle with cinnamon.
It’s normal for rice pudding to absorb part of the liquid as it cools, and the texture becomes more compact. Add a little more milk and mix until it is creamy again.
For the plum compote:
Cut the plums into large cubes and place them in a deep saucepan; sprinkle with sugar and drops of lemon juice. Cook over low heat until tender, but firm, and syrup forms. Remove from heat and let cool. Set aside.
Can I make rice pudding ahead of time?
Yes, keep the dessert in the fridge for up to 3 days. When ready to enjoy, reheat gently with a splash of milk for creaminess.
Serving suggestions
- Golden raisins: add some raisins for natural sweetness.
- Chocolate: sprinkle with dark grated chocolate.
- Caramelized bananas: serve with some caramelized bananas and caramel sauce.

Storing
