Ingredients
The main ingredients of this recipe are:
- Flour: gluten-free all-purpose flour and cornstarch for the fruit.
- Butter: unsalted butter melted.
- Milk: whole milk.
- Plums: fresh ripe plums.
- Berries: fresh or frozen mixed berries.
- Sugar: white granulated sugar for the batter and brown sugar for the fruit filling.
How to make plum and berry cobbler
In a medium bowl whisk together the GF all-purpose flour, baking powder, salt, and sugar. Add the melted butter and the milk, and mix until incorporated.
Let rest covered in the refrigerator for at least 20 minutes.
In a large bowl toss the sliced plums, berries, brown sugar, and cornstarch. Transfer the mixture to a baking dish and let rest for 15 minutes.
Preheat oven to 375°F.
Droop scoops of dough on top of the plum mixture. Divide as evenly as possible, so that every portion has a scoop of dough.
Brush the dough with cream and sprinkle with 1 tablespoon of coarse sugar.
Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.
Serve warm with a scoop of vanilla ice cream or whipped cream.
Storing
It’s best to serve it warm after baking. Keep leftovers covered in the refrigerator for up to 4-5 days. To reheat the dessert warm in a 350°F oven for about 15 minutes.
Variations
- Fruit: replace the plums with peaches, strawberries, and so on. You need 1kg (2,2 lbs) of fruit for the recipe.
- Flour: try a different mix of GF flour. Almond flour is a very good option.
