Ingredients

The main ingredients for this recipe are:

  • Rice: short-grain white rice, is the same rice you would use to make a risotto.
  • Milk: I use whole milk for more creaminess and flavor. But you can use whatever milk you have at home.
  • Sugar: granulated sugar. If you are going to use brown sugar, keep in mind that the color of the rice pudding will be darker.
  • Orange: fresh orange peels to add flavor. You can also use the lemon peel.
  • Cinnamon: a cinnamon stick to flavor and ground cinnamon to sprinkle on top.
  • Plums: ripe plums with peel. You can make a compote of the fruit you like most. I like the contrast between the plums and the sweetness of the rice pudding.

How to make easy rice pudding

For the rice pudding

In a deep saucepan bring to boil the rice and the milk with the cinnamon stick and the orange peels over high heat.

Reduce the heat to low and cook the rice in the milk stirring often until it is almost ready. At that time, when it’s almost ready, add the sugar and finish cooking, for about two minutes. If it is necessary add a little more milk, it should be creamy.

Let cool or serve immediately with the plum sauce. Sprinkle with cinnamon.

It is normal that when the rice pudding cools it absorbs part of the liquid and the texture becomes more compact. What you have to do is add a little more milk and mix until it is creamy again.

For the plum compote

Cut the plums into large cubes and place them in a deep saucepan, sprinkle with sugar and drops of lemon juice.

Cook over low heat until tender, but firm, and syrup forms. Remove from heat and let cool. Set aside.

Serving suggestions

  • Golden raisins: you can add some risings to the rice pudding.
  • Chocolate: top with dark grated chocolate
  • Caramelized bananas: serve with some caramelized bananas and caramel sauce.
  • Ground cinnamon: sprinkle the dessert with ground cinnamon.

Storing

You can serve the rice pudding immediately, or let it cool at room temperature and store it in the fridge. It is always better to add the plum sauce when at the moment of serving. The pudding will keep in your fridge for about 3/4 days.

Ingredients
  

For the rice pudding

  • 1 cup uncooked short-grain white rice
  • 4 cups milk
  • Orange peels
  • Stick of cinnamon
  • ½ cup plus 2 tablespoons of sugar (120gr)

For the plum compote

  • 6 to 8 ripe plums
  • 2 tablespoons white granulated sugar
  • Drops of lemon juice

Instructions

  • Cut the plums into large cubes and place them in a deep saucepan, sprinkle with sugar and drops of lemon juice.
  • Cook over low heat until tender, but firm, and syrup forms.
  • Remove from heat and let cool. Set aside.

For the rice pudding

Notes

Keep in mind that the rice pudding will thicken as it cools. If it’s too thick you can add a little more milk and mix until it is creamy again.
