The dessert has a fresh, juicy, not-too-sweet peach filling, and is topped with a crunchy and buttery brown sugar oat topping. You can also add some dried fruits.

Ingredients
- The main ingredients of this recipe are:
- Peaches: fresh peaches. Not too green or unripe, but not too ripe either.
- Butter: unsalted, cooled butter.
- Oats: gluten-free all-fashioned rolled oats.
- Almond flour: Store-bought almond flour or homemade almond flour is okay.
- Sugar: both brown sugar and granulated sugar.
- Lemon: drops of fresh lemon juice.

How to make GF Peach Crumble with oats
Preheat oven to 350ºF (180°C).
In a large bowl, place the sliced peaches, corn starch, sugar, and lemon juice, and mix. Let rest for 10 minutes.
Process the diced cold butter, GF oats, almond flour, brown sugar, granulated sugar, and salt. If you don’t have a food processor, place them in a medium bowl and toss them with your fingertips to combine.
Place the peach mixture into the desired baking dish and sprinkle the oat crumble over the peaches.


Bake for about 40 minutes, until the topping is golden brown and the peaches are tender and bubbling.
Serve warm with whipped cream or a scoop of ice cream if desired.
Storing
Store the dessert covered in the fridge for 3 days. I don’t recommend freezing it, it’s not the same.

Variations
- Fruit: you can add other fruits like blueberries, raspberries, or blackberries. Strawberry is another good option.
- Topping: replace the almond flour with another GF flour, like gluten-free all-purpose flour.
- Optional adds: add some dried fruits like chopped toasted almonds or walnuts. Or you can add orange zest to the peach filling.
- Baking dish: You can make the crisp in individual ramekins or a big baking dish. Adjust the recipe to the size of your baking dish.
