For the crust:
- 1 ¼ cups gluten-free all-purpose flour
- ½ cup granulated sugar
- 1 ½ teaspoons baking powder
- Pinch of salt
- ⅔ cup milk
- ¼ cup unsalted butter
For the filling:
- 5-6 pears, peeled and chopped
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
For the topping: Whisk together the gluten-free all-purpose flour, baking powder, salt, and sugar in a medium bowl. Add the melted butter and the milk, and mix until incorporated. Let rest, covered, in the refrigerator for at least 20 minutes.
For the filling: Place the peeled and chopped pears, sugar, lemon juice, and cornstarch in a baking dish. Let the filling rest.
Preheat oven to 350°F (180°C).
Once the dough has rested, drop spoonfuls of dough over the pears.
Bake for 40-50 minutes, or until the crust is golden brown and the filling is bubbling. Let the dessert rest for about 15 minutes before serving to allow the filling to set.
Serve warm with a scoop of vanilla ice cream or whipped cream if desired.
Keep leftovers covered in the refrigerator for several days. Warm them before eating.
