Super easy recipe for a gluten-free dessert that everyone will love! The sweet pears with the fresh ginger, and the coconut crumble is a perfect match! Ideal to share at the table with family or friends.
3/4cupgluten-free flour (1/4 cup coconut flour, 1/2 cup gluten-free all-purpose flour)
1/2cupcold unsalted butter, diced (113gr)
1/2cupbrown sugar
1/2cupalmond flour
1/4cupchopped toasted almonds (optional)
Instructions
Preheat the oven to 350° F.
Place the cubed pears, grated ginger, and lemon juice in a baking dish and lightly mix. I used a round glass baking dish.
Process the GF flour with the very cold and diced butter until crumbs form (you can also use your hands if you don't have a food processor). Mix them with the sugar and ground almonds.
Place the crumble on top of the fruit and sprinkle with chopped toasted almonds (optional).
Cook for 30-35 minutes or until the cover is well browned and crispy and the pears are bubbling.
Serve it warm or cold with a scoop of ice cream or whipped cream.
Notes
The best way to peel ginger is with a spoon.
Store the dessert covered in the fridge for 3/4 days.
