GF Pear Cobbler is an easy and simple dessert. The sweet and tender pears, mixed with the soft and buttery crust, are delicious! Best served warm with whipped cream or a scoop of vanilla ice cream.
In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, salt, and sugar. Add the melted butter and the milk, and mix until incorporated.
Let rest covered in the refrigerator for at least 20 minutes.
Place the peeled and chopped pears, sugar, lemon juice, and cornstarch in a baking dish. Let rest.
Preheat oven to 350°F (180°C).
Once the dough has rested, drop dough balls on top of the pears.
Bake for 40/50 minutes or until the crust is golden brown and the filling is bubbling.
Serve warm with a scoop of vanilla ice cream or whipped cream if desired.
Notes
Keep the cobbler covered in the refrigerator for several days. Warm it before eating.
