Pear Cobbler (Gluten-Free)

GF Pear Cobbler is an easy and simple dessert. The sweet and tender pears, mixed with the soft and buttery crust, are delicious! Best served warm with whipped cream or a scoop of vanilla ice cream.

Ingredients
  

For the crust:

  • 1 1/4 cup gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoon baking powder
  • Pinch of salt
  • 2/3 cup milk
  • 1/4 cup unsalted butter

For the filling:

  • 5/6 pears peeled and chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon

Instructions
 

  • In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, salt, and sugar. Add the melted butter and the milk, and mix until incorporated.
  • Let rest covered in the refrigerator for at least 20 minutes.
  • Place the peeled and chopped pears, sugar, lemon juice, and cornstarch in a baking dish. Let rest.
  • Preheat oven to 350°F (180°C).
  • Once the dough has rested, drop dough balls on top of the pears.
  • Bake for 40/50 minutes or until the crust is golden brown and the filling is bubbling.
  • Serve warm with a scoop of vanilla ice cream or whipped cream if desired.

Notes

Keep the cobbler covered in the refrigerator for several days. Warm it before eating.
