Gluten-Free Orange Poppy-Seed Muffins (easy and basic recipe)

These gluten-free orange poppy seed muffins are a delicious, easy-to-make treat perfect for breakfast, brunch, or a snack. They're bursting with fresh orange zest and juice and full of poppy seeds. Ingredients
  

  • 2 cups gluten-free all-purpose flour
  • 3/4 cup granulated sugar
  • 3 teaspoons baking powder
  • Pinch of salt
  • 3/4 cup fresh orange juice
  • 1/3 cup vegetable oil
  • 1 egg room temperature
  • 1 tablespoon fresh orange zest
  • 2 to 3 tablespoons poppy-seeds

Instructions
 

  • Preheat the oven to 350°F (180°C). Line 12 muffin cups with liners or lightly grease them.
  • Whisk gluten-free all-purpose flour, baking powder, salt, and poppy seeds in a large bowl.
  • Beat the egg, oil, sugar, orange juice, and zest in a medium bowl. Pour the mixture into the dry ingredients and mix just until well incorporated.
  • Pour the mixture into the prepared pans. Fill the muffins 3/4 full, dividing as evenly as possible.
  • Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool before removing.

Notes

Store the muffins covered at room temperature for 3 days or in the fridge for 5 days. Freeze them in an air-tight container or freezer bag.
