How to make orange poppy-seed muffins
Preheat the oven to 350°F (180°C). Line 12 muffin cups with liners or lightly grease them.
Whisk gluten-free all-purpose flour, baking powder, salt, and poppy seeds in a large bowl.
Beat the egg, oil, sugar, orange juice, and zest in a medium bowl. Pour the mixture into the dry ingredients and mix just until well incorporated.


Pour the mixture into the prepared pans. Fill the muffins 3/4 full, dividing as evenly as possible.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Let cool before removing.

Store the muffins covered at room temperature for 3 days or in the fridge for 5 days. Freeze them in an airtight container or freezer bag.
