GF Plum and Blueberry Cobbler (easy & juicy)

GF Plum and Berry Cobbler has a fresh and juicy plum and berry filling and a soft and rich crust. It's a simple and delicious GF plum dessert! It's perfect for summer gatherings or potlucks.

Ingredients
  

For the crust

  • 1 and ½ cup GF all-purpose flour
  • ½ cup sugar
  • 1 and ½ teaspoon baking powder
  • Pinch of salt
  • cup milk
  • ¼ cup butter, melted
  • 2 tablespoons heavy cream for topping
  • 2 tablespoons powdered sugar, for topping

For the filling

  • 1 lb plums (500g)
  • 1 lb blueberries (500g)
  • ¾ cup brown sugar
  • 2 tablespoons cornstarch

Instructions
 

  • Whisk together the GF all-purpose flour, baking powder, salt, and sugar in a medium bowl. Add the melted butter and the milk, and mix until incorporated.
  • Let rest covered in the refrigerator for at least 20 minutes.
  • In a large bowl, toss the sliced plums, blueberries, brown sugar, and cornstarch. Transfer the mixture to a baking dish and let it rest.
  • Preheat oven to 375°F (190°C).
  • Droop scoops of dough on top of the plum mixture. Divide as evenly as possible, so that every portion has a scoop of dough.
  • Brush the dough with cream and sprinkle with 1 tablespoon of coarse sugar.
  • Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.
  • Serve warm with a scoop of ice cream or whipped cream.

Notes

Storing: Leftovers can be kept covered in the refrigerator for up to 4-5 days. To reheat them, warm the dessert in a medium oven for about 15 minutes.
Blueberries: Fresh or frozen blueberries both work well in cobblers, but don't thaw them.
