GF Pear Ginger Crumble (no oats)

This is a super easy and quick recipe for a gluten-free dessert that never goes out of season! It has a tender fruit filling and a crisp, golden topping full of warm spices. It's the perfect fruit dessert for potlucks, celebrations, or just because.

Ingredients
  

  • 5 - 6 pears, peeled, seeded, and cubed
  • 1 teaspoon ginger, optional, peeled and grated
  • 1/2 fresh lemon juice
  • 2 tablespoons granulated sugar
  • 1 cup gluten-free all-purpose flour
  • 1/3 cup almond flour
  • 1/2 cup cold unsalted butter, diced (113g)
  • 1/2 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350° F (180°C).
  • Place the peeled, seeded, cubed pears, grated ginger, lemon juice, and 2 tablespoons of sugar in a baking dish and lightly mix. Set aside.
  • With a food processor: process the gluten-free all-purpose flour, sugars, ground cinnamon, and cold diced butter until crumbs form.
  • By hand: In a medium bowl, mix the diced cold butter, sugars, gluten-free all-purpose flour, and almond flour. Rub together with your fingertips until it resembles breadcrumbs.
  • Place the crumble on the top of the fruit.
  • Cook for 40 minutes or until the cover is well browned and crispy and the pears are bubbling.
  • Serve it warm or cold with a scoop of ice cream or whipped cream.

Notes

Store the dessert covered in the refrigerator for up to 3 to 4 days.
