GF Irish Soda Bread with raisins (no yeast)

Easy and quick recipe for a GF Bread that is fantastic. No yeast required and just a few ingredients. This recipe takes raisins, but it's optional. Irish Soda Bread is a perfect side for your meals: soups, stews, and so on.

Ingredients
  

  • 2 3/4 cups gluten-free all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup unsalted butter (60g)
  • 2 tablespoons granulated sugar
  • 1 egg, lightly beaten
  • 3/4 cup buttermilk
  • 3/4 cup raisins

Instructions
 

  • Preheat oven to 350°F (180°C).
  • Sift gluten-free all-purpose flour, salt, baking soda, and sugar in a large bowl.
  • Rub in the butter with your fingers or a fork, and stir in raisins.
  • Add the egg and the buttermilk and mix until well incorporated, and fold the dough together.
  • Place the dough on a lightly greased oven baking sheet. Press the dough into a 20cm round and with a very sharp knife, cut a deep cross in the top of the dough.
  • Bake for 40 minutes or until golden brown. Keep in mind that all ovens are different.
  • Let cool before removing to a wire rack.

Notes

Store the bread covered at room temperature for 3 days or in the refrigerator for up to a week. You can also freeze the bread in an air-tight container or freezer bag.
