Chocolate Peanut Butter Balls (Vegan + GF)

These GF vegan peanut butter balls are an easy no-bake treat made with simple ingredients (6 ingredients). With no butter, no refined flour, and no baking required, these chocolate peanut butter balls are a quick option for satisfying your sweet cravings.

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 4 tbsp shredded coconut
  • 6 tbsp peanut butter
  • 4 tbsp almond or soy milk
  • 7 ounces dark chocolate (200 g)

Instructions
 

  • Whisk almond flour, cocoa powder, and shredded coconut in a medium bowl. Add the peanut butter and vegetable milk, and mix well. Or place the ingredients in a food processor and process.
  • Shape balls with your fingers. If necessary, you can add more milk to the mixture. Place the balls in the freezer for about 15 minutes.
  • Melt the chocolate in a double boiler, or in the microwave, for periods of 30seconds.
  • Cover the balls with melted chocolate and place them in the freezer until the chocolate sets.

Notes

Melted chocolate: you can do it in a double boiler at low heat or in the microwave at medium power. You have to be careful because it burns easily.
Storing: Store the balls in the refrigerator for about 5 days. You can also freeze them in an air-tight container or freezer bag for about 3 months.
