- 1 cup almond flour
- 1/2 cup cocoa powder
- 4 tbsp shredded coconut
- 6 tbsp peanut butter
- 4 tbsp almond or soy milk
- 7 ounces dark chocolate (200 g)
Whisk almond flour, cocoa powder, and shredded coconut in a medium bowl. Add the peanut butter and vegetable milk, and mix well. Or place the ingredients in a food processor and process.
Shape balls with your fingers. If necessary, you can add more milk to the mixture. Place the balls in the freezer for about 15 minutes.
Melt the chocolate in a double boiler, or in the microwave, for periods of 30seconds.
Cover the balls with melted chocolate and place them in the freezer until the chocolate sets.
Melted chocolate: you can do it in a double boiler at low heat or in the microwave at medium power. You have to be careful because it burns easily.
Storing: Store the balls in the refrigerator for about 5 days. You can also freeze them in an air-tight container or freezer bag for about 3 months.
