How to make gluten-free pumpkin bars with cream cheese frosting

Preheat the oven to 350°F (180°C). Lightly grease an 8-inch square cake pan, 8×8 baking pan, or line with parchment paper.

Whisk gluten-free all-purpose flour, baking powder, baking soda, salt, and spices in a large bowl. Set aside.

In a medium bowl, beat the oil, eggs, and sugars for 2 minutes. Add the pumpkin puree and vanilla extract. Mix well. Pour the mixture into the dry ingredients and mix until well incorporated with a rubber spatula or on low speed of the hand mixer. Don’t overmix the batter.

Transfer the batter to the prepared baking pan and smooth the top.

Bake for 30-40minutes or until a toothpick inserted in the center of the cake comes out clean.

Let cool and remove the cake by lifting the paper on both sides. Let cool completely on a wire rack.

When the cake is completely cool, top with the cream cheese frosting and finish with pumpkin seeds if desired.

The unfrosted cake can be kept at room temperature, but once it’s covered with cream cheese frosting, it should be refrigerated. Can I freeze gluten-free pumpkin bars? Yes, freeze the unfrosted cake in an airtight container. Thaw completely before frosting and serving.
