How to make coconut brigadeiros
Place condensed milk and butter into a deep saucepan over mínimum heat, stirring constantly with a wooden spoon. Add the shredded coconut and keep stirring.
Cook until the mixture thickens, stirring constantly, and taking care that the mixture does not burn. This process takes about 12 minutes. It’s ready when you stir, and the mixture separates from the saucepan, or you tilt the saucepan, and it doesn’t stick, and it separates.
Let cool at room temperature and then place covered in the refrigerator to completely cool for at least 1 hour.
When the mixture is completely cold, roll the balls in the shredded coconut.
Store brigadeiros covered in the fridge.
