Gluten-Free Madeleines Recipe

These homemade GF madeleines are super tasty. They are soft, tender, and perfectly sweet. You can easily bake madeleines at home, as the traditional version. These classic small bites are perfect for dipping into a cup of tea or any occasion.

Ingredients
  

  • 1/2 cup unsalted butter
  • 2 eggs, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon zest
  • 1 and 1/4 cup gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions
 

  • Melt the butter in the microwave and set it aside.
  • In a medium bowl, beat the eggs with the sugar and vanilla extract at high speed for 3 minutes until pale and smooth. Beat in the lemon zest.
  • Add the warm melted butter and mix well with a rubber spatula. Gradually add the sifted dry ingredients and mix until well incorporated.
  • Let the dough rest covered in the refrigerator for at least 1 hour.
  • Preheat the oven to 350°F (180°C). Spray, lightly oil, or butter a madeleine pan.
  • Pour the mixture into the prepared madeleine pan and fill ¾ full, dividing the mixture as evenly as possible.
  • Cook for 10/12 minutes or until golden brown. Let cool before removing.
  • Dust the madeleines with powdered sugar (optional).

Notes

Madeleines can be stored in an airtight container at room temperature for up to 3 days. You can also freeze them once they have cooled completely, in an airtight container or freezer bag for up to 3 months. When you are ready to enjoy them, warm them slightly in a medium oven before eating or microwave them for about 20 seconds.
