Gluten-Free Ginger Molasses Cookies

Ingredients
  

  • 2 ¾ cup gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • Pinch of salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg room temperature
  • 1/4 cup molasses
  • 1 tablespoon water
  • 1/2 cup granulated sugar for rolling

Instructions
 

  • Whisk together gluten-free all-purpose flour, baking soda, salt, ginger, cinnamon, and cloves in a medium bowl. Set aside.
  • Cream butter and sugar in a large bowl with an electric mixer until light and fluffy. Beat in the egg, then stir in molasses and water. Gradually add sifted dry ingredients and mix until well combined.
  • Let the dough rest covered in the refrigerator for at least 1 hour.
  • Preheat oven to 350°F (180°C). Grease a baking sheet or line it with a silicone mat.
  • Shape dough into balls and roll them in the remaining sugar.
  • Place the cookies 2 inches apart on the prepared baking sheets and flatten slightly.
  • Bake for 10 minutes. Let cool before removing to a wire rack to cool completely.

Notes

Store the cookies covered at room temperature or in the refrigerator for up to a week. You can freeze the cookies in an air-tight container or freezer bag.
