Gluten-Free Crepes

Gluten-free crepes are easy to make and a basic recipe to always have on hand. They're made with ingredients you probably have on hand and are super versatile. They can be filled/topped with sweet or savory ingredients.

Ingredients
  

  • 1 cup milk
  • 2 eggs room temperature
  • 2 tablespoons oil
  • 1 tablespoon sugar optional
  • 1 cup gluten-free all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions
 

  • In a large bowl mix the eggs with the milk, oil, and sugar.
  • Sift the dry ingredients and mix with a rubber spatula until there are no lumps left.
  • Heat a nonstick frying pan over medium heat and spray with oil. Pour about 1/4 cup batter into the pan per crepe and move the pan in a circular motion to form the desired shape and the batter coats the surface evenly. Flip when bubbles start appearing on the surface and the bottom has turned light brown, and cook until the other side has cooked through and turned light brown.
  • Serve, preferently, hot with the desired toppings/fillings.
