Servings 6 lava cakes

Ingredients

  • ¾ cup unsalted butter (170g) plus more for greasing the ramekins
  • 6 ounces dark chocolate (170g), chopped
  • 3 egg yolks, room temperature
  • 3 eggs, room temperature
  • ½ cup white granulated sugar
  • ½ cup corn starch (60g)
  • Optional: vanilla ice cream or whipped cream to serve.

Instructions

  • Preheat oven to 460°F (240°C). Butter six ½-cup ramekins and lightly dust them with cocoa powder. Place the ramekins on a baking sheet.
  • In a deep saucepan, melt the butter with the chopped chocolate over low heat. Stir until completely melted and smooth. Remove from the heat.
  • Whisk in the egg yolks and eggs while beating vigorously with a hand whisk. Add the sugar and whisk until smooth. Sift the cornstarch over the chocolate mixture and whisk until no lumps remain.
  • Divide the mixture evenly into the prepared ramekins.
  • Bake for about 7 minutes, or until the edges are set and the centers are still soft and slightly wobbly (not liquid). The baking time can vary depending on your oven and the size of your ramekins. Before placing the molds in the oven, make sure it's completely preheated at a high temperature.
  • Let the cakes rest for 1 minute. Carefully run a thin knife around the edges, then invert each ramekin onto a serving plate. Serve immediately with vanilla ice cream or whipped cream.

Notes

Baking: Keep a close eye on the cakes while they’re in the oven—you don’t want to overbake them. Even a few extra minutes can dry out the center and prevent you from getting that delicious molten lava effect.
Ramekin size: If you don’t have ½-cup ramekins, you can use larger ramekins instead. You’ll get 4 lava cakes, and they’ll need about 3 extra minutes of baking time. Since ramekin sizes can vary, keep a close eye on them toward the end of baking to make sure the centers remain soft and molten.
