Easy Gluten-Free Peach Cobbler (Perfect for summer!)

This gluten-free peach cobbler is a simple and comforting summer dessert that’s perfect for using fresh, juicy peaches. It has a juicy and rich peach filling and soft, biscuit-like topping. It’s a great option for summer gatherings or potlucks, and it pairs beautifully with a scoop of vanilla ice cream.

Ingredients
  

For the crust

  • 1 ¼ cup gluten-free all-purpose flour
  • 1/3 cup white granulated sugar
  • 1 ½ teaspoons baking powder
  • Pinch of salt
  • 2/3 cup milk
  • 1/4 cup butter, melted

For the filling

  • 2 lb peaches (1kg)
  • 1/2 cup white granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions
 

  • Whisk together the GF all-purpose flour, baking powder, salt, and sugar in a medium bowl. Add the melted butter and the milk, and mix until incorporated.
  • Let rest covered in the refrigerator for at least 20 minutes.
  • In a large bowl, toss the sliced peaches, sugar, lemon juice, and cornstarch. Transfer the mixture to a baking dish and let it rest.
  • Preheat oven to 350°F (180°C).
  • Droop scoops of dough on top of the peach mixture.
  • Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.
  • Serve warm with a scoop of vanilla ice cream or whipped cream if desired.

Notes

It's best served immediately, warm, with a scoop of ice cream or whipped cream. Keep leftovers covered in the refrigerator for about 4 days. To reheat, bake at 350°F (180°C) for about 15 minutes, or in the microwave, warm as tasted.
