Ingredients

  • 5/6 pears, peeled, seeded, and cubed
  • 5 gr ginger, peeled and grated
  • 1 lemon juice
  • 1 cup gluten-free flour (1/2 cup coconut flour, 1/2 cup gluten-free all-purpose flour)
  • 1/2 cup cold unsalted butter, diced (113gr)
  • 1/2 cup brown sugar
  • 1/2 cup ground almond (or almond flour)
  • 1/4 cup chopped toasted almonds (optional)

Instructions

  • Preheat the oven to 350° F.
  • Place the cubed pears, grated ginger, and lemon juice in a baking dish and lightly mix. I used a round glass baking dish.
  • Process the GF flour with the very cold and diced butter until crumbs form (you can also use your hands if you don't have a food processor). Mix them with the sugar and ground almonds.
  • Place the crumble on top of the fruit and sprinkle with chopped toasted almonds (optional).
  • Cook for 30-35 minutes or until the cover is well browned and crispy and the pears are bubbling.
  • Serve it warm or cold with a scoop of ice cream or whipped cream.

Notes

  • The best way to peel ginger is with a spoon.
  • Store the dessert covered in the fridge for 3/4 days.
