Plum and Berry Cobbler (Gluten-Free)

GF Plum and Berry Cobbler have a fresh and juicy plum and berry filling and a soft and rich crust. It's delicious! A perfect dessert to share and enjoy with family or friends.

For the crust
- 1 and 1/2 cup GF all-purpose flour
- 1/2 cup sugar
- 1 and 1/2 teaspoon baking powder
- Pinch of salt
- 2/3 cup milk
- 1/4 cup butter, melted
- 2 tablespoons heavy cream for topping
- 2 tablespoons powdered sugar, for topping
For the filling
- 1 lb plums (500gr)
- 1 lb berries (500gr)
- 3/4 cup brown sugar
- 2 tablespoons cornstarch
In a medium bowl whisk together the GF all-purpose flour, baking powder, salt, and sugar. Add the melted butter and the milk, and mix until incorporated.
Let rest covered in the refrigerator for at least 20 minutes.
In a large bowl toss the sliced plums, berries, brown sugar, and cornstarch. Transfer the mixture to a baking dish and let rest.
Preheat oven to 375°F.
Droop scoops of dough on top of the plum mixture. Divide as evenly as possible, so that every portion has a scoop of dough.
Brush the dough with cream and sprinkle with 1 tablespoon of coarse sugar.
Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.
Serve warm with a scoop of ice cream or whipped cream.
