Ingredients
Some NOTES about the ingredients of this recipe:
- Pumpkin: canned pumpkin puree or homemade. If making puree from scratch, roast the pumpkin to release moisture.
- Eggs: room-temperature eggs are better.
- Oil: natural oil, like sunflower oil.

How to make a gluten-free pumpkin cake with cream cheese frosting
Preheat the oven to 350°F (180°C). Lightly grease an 8-inch square cake pan, 8×8 baking pan, or line with parchment paper.
Whisk gluten-free all-purpose flour, baking powder, baking soda, salt, and spices in a large bowl. Set aside.
In a medium bowl, beat the oil, eggs, and sugars for 2 minutes. Add the pumpkin puree and vanilla extract. Mix well. Pour the mixture into the dry ingredients and mix until well incorporated with a rubber spatula or on low speed of the hand mixer. Don’t overmix the batter. Transfer the batter to the prepared baking pan.
Bake for 30-40minutes or until a toothpick inserted in the center of the cake comes out clean.


Let cool and remove the cake by lifting the paper on both sides. Let cool completely on a wire rack.
When the cake is completely cool, top with the cream cheese frosting and finish with pumpkin seeds if desired.
Store the cake covered in the refrigerator.

Baking tips
- Pumpkin: If making homemade pumpkin puree, roast the pumpkin to release moisture. If using canned, don’t use pumpkin pie filling, which is already sweetened and spiced.
- Don’t overmix the batter. Once the dry ingredients are incorporated, mix just until combined. Overmixing can make the cake denser.
