Ingredients

  • 5 eggs yolk
  • 1 egg
  • 1/2 cup and 2 tbsp white granulated sugar
  • 2 cups cream
  • 1 Orange zest

Instructions

  • In a medium bowl mix, without beating, the yolks, egg, and sugar.
  • In a small deep saucepan heat the cream and orange zest. Pour over the egg mixture.
  • Sift the mixture and let chill for an hour in the refrigerator.
  • Preheat oven to 300°F
  • Fill the ramekins with the mixture and cover with aluminum foil.
  • Cook for 40 minutes in a double boiler until the preparation is just soft in the center.
  • Remove from the oven, let cool, and place them covered in the fridge.
  • Before serving, sprinkle with sugar and use a blow torch to caramelize it. Hold the flame just above the sugar and keep moving it round and round until caramelized.

Notes

Store the dessert covered in the fridge for up to 2 or 3 days. You can make it in advance, and then you only need to take it out of the fridge, sprinkle it with sugar, and use a blow torch to caramelize it.
