Gluten-Free Financiers Recipe
Easy gluten-free financiers recipe!! It takes just a few ingredients and not many steps. Ideal to enjoy with tea in the afternoons!

About this recipe
Financiers are a classic of French pastry and they are very easy to make. This gluten-free version doesn’t have many ingredients and the recipe has few steps. They only use egg whites and it doesn’t take a raising agent.
The recipe starts with browned butter (beurre noisette in French), which consists of heating it until it turns a golden color and gives off a hazelnut smell. It gives them an extra toasted nutty flavor.
Traditionally they are made with a special rectangular mold, but in this recipe, we made them round. They are ideal to enjoy with tea in the afternoons!!

Ingredients
- Almond flour: I used store-bought almond flour, but you can make homemade almond flour.
- Brown rice flour is the other main flour in the recipe.
- Salt: enhance flavors.
- Brown sugar: you can also use white granulated sugar, but you should check the amount.
- Butter: unsalted butter.
- Eggs: room temperature eggs are better. We need the egg whites.
- Vanilla extract: add flavor.

How to make Gluten-Free Financiers
Melt butter in a small saucepan over medium heat. Continue cooking until butter is boiling and turns golden brown and smells nutty, for about 8 minutes. Pour into a bowl and let cool.
Preheat the oven to 350F. Line 12 muffin cups with liners or lightly grease them. You can also use a rectangular mold for financiers.
In a medium bowl whisk the brown sugar with the almond flour and salt.
Add the egg whites and mix well. Add the vanilla extract and the brown rice flour. At last, add the browned butter and mix until incorporated well.


Pour the mixture into the prepared molds. In this step, if you want, you can also add to the mixture some mixed berries.
Bake for 20/25 minutes, keep in mind that all ovens are different. To know if it’s ready insert a toothpick in the center and it should get out clean.
Let cool before removing and sprinkle with powdered sugar (optional).

Variations
You can make the financiers, just as they are, or you can also add mixed berries. I made the two versions, and they are both delicious.
You can also try to replace the brown rice flour with another gluten-free flour. I haven’t tried it.
Storing
Store financiers in an air-tight container at room temperature for up to 3 days or you can store them in the fridge for up to 5 days. Also, you can freeze them in an airtight container or freezer bag for up to 3 months. To reheat frozen financiers, microwave for about 20 seconds or bake for 5-10 minutes in a medium oven (350°).
