How to make GF ginger molasses cookies

Whisk together gluten-free all-purpose flour, baking soda, salt, ginger, cinnamon, and cloves in a medium bowl. Set aside.

Cream butter and sugar in a large bowl with an electric mixer until light and fluffy. Beat in the egg, then stir in the molasses and water. Gradually add sifted dry ingredients and mix until well combined.

Let the dough rest covered in the refrigerator for at least 1 hour.

Preheat oven to 350°F (180°C). Grease a baking sheet or line it with a silicone mat.

Shape dough into balls and roll them in the remaining sugar.

Place the cookies 2 inches apart on the prepared baking sheets and flatten slightly.

Bake for 10 minutes. Let cool before removing to a wire rack to cool completely.

Storing

Store the cookies covered at room temperature or in the refrigerator for up to a week. You can freeze the cookies in an air-tight container or freezer bag.
