How to make GF ginger molasses cookies
Whisk together gluten-free all-purpose flour, baking soda, salt, ginger, cinnamon, and cloves in a medium bowl. Set aside.
Cream butter and sugar in a large bowl with an electric mixer until light and fluffy. Beat in the egg, then stir in the molasses and water. Gradually add sifted dry ingredients and mix until well combined.
Let the dough rest covered in the refrigerator for at least 1 hour.

Preheat oven to 350°F (180°C). Grease a baking sheet or line it with a silicone mat.
Shape dough into balls and roll them in the remaining sugar.
Place the cookies 2 inches apart on the prepared baking sheets and flatten slightly.
Bake for 10 minutes. Let cool before removing to a wire rack to cool completely.

Storing
Store the cookies covered at room temperature or in the refrigerator for up to a week. You can freeze the cookies in an air-tight container or freezer bag.
Top tips for a perfect cookie
- Room-temperature eggs and butter are best. This will help cookies rise because it helps to incorporate more air into the dough when creaming.
- Give all the cookies the same size, so they cook at the same time.
- Give the cookies some space on the baking sheet since they expand when cooked.
- Don’t over-bake them, the bottom should be lightly golden.
- Let the cookies cool before removing them to a rack, otherwise, they are very likely to break.
