What goes in: ingredient notes

  • Pumpkin puree: Use plain pumpkin puree, not pumpkin pie filling, which already contains added sugar and spices. If using homemade puree, make sure it’s thick and free of excess moisture for the best custard texture.
  • Eggs: Room-temperature eggs are better.
  • Milk: Whole milk for the best flavor and consistency.
  • Cream: Heavy cream for a richer, creamier custard.
  • Spices: Ground cinnamon and nutmeg complement the pumpkin.

How to make creamy pumpkin flan

Preheat oven to 350°F (180°C).

Make the caramel:

Combine the sugar and water in a deep saucepan and heat until the sugar melts and turns into amber caramel. Watch it closely as the color changes, and remove it from the heat before it gets too dark, as this can make the caramel taste bitter. Carefully pour the caramel into an 8-inch baking pan or a similar-sized mold, tilting it gently to coat the bottom.

Prepare the custard:

In a large bowl, lightly beat the eggs. Add the condensed milk, pumpkin puree, milk, cream, vanilla, and spices. Whisk until the mixture is smooth and well combined.

Pour the mixture into the caramelized mold and cover with aluminum foil.

Place the mold in a water bath and bake for 50-60 minutes. Cooking times can vary depending on your oven and mold size and depth. It’s ready when, gently moving the mold, the edges look firm and the center jiggles slightly (like soft gelatin), without appearing liquid or “watery.”

Let the flan cool at room temperature, then cover and refrigerate overnight for the best texture and easier unmolding.

To unmold, gently run a knife around the edges of the flan. Place a serving plate upside down over the mold, then carefully flip them together. Lift the mold to release the flan and let the caramel sauce flow over the top.

Store the flan covered in the refrigerator for up to 3 – 4 days.

Good to know: baking tips

  • Thick pumpkin puree: Use thick pumpkin puree without excess moisture for the best custard texture. Avoid pumpkin pie filling, which is already sweetened and spiced.
  • Make the caramel carefully. Heat the sugar and water over medium heat, watching closely as the mixture changes color. Remove it from the heat as soon as it turns amber to keep the caramel from becoming too dark or bitter.
  • Avoid overbaking. The flan should be set around the edges but may still have a slight jiggle in the center. It will continue to firm up as it cools.
  • Let it chill completely. Refrigerate the flan until completely cold so the custard sets into a smooth, creamy texture. Chilling it thoroughly also helps it hold its shape when unmolded and sliced.

You might wonder: FAQ

Can I make pumpkin flan ahead of time? Yes! Pumpkin flan needs chilling time to set properly, so it’s a great make-ahead dessert. Prepare it a day in advance and keep it refrigerated until you’re ready to serve.

How do I know when pumpkin flan is done baking? The edges should look set, while the center should still have a slight jiggle when you gently move the pan. The custard will continue to firm up as it cools and chills.

Can I freeze pumpkin flan? Freezing isn’t recommended, as the custard may become watery or grainy after thawing, losing its smooth, creamy texture.
