Super easy recipe for a gluten-free dessert that everyone loves! The sweet pears with the fresh ginger, and the coconut crumble is a perfect match! Ideal to share at the table with family or friends.
1cupgluten-free flour (1/2 cup coconut flour, 1/2 cup gluten-free all-purpose flour)
1/2cupcold unsalted butter, diced (113gr)
1/2cupbrown sugar
1/2cupground almond (or almond flour)
1/4cupchopped toasted almonds (optional)
Instructions
Preheat oven to 350°F.
Peel the pears, remove the seeds, and cubed. Peel the ginger with a spoon and chop it. Mix it with the pears.
Place the fruits in a baking dish, I used a round glass baking dish, and sprinkle with the lemon juice.
Process the flour with the very cold and diced butter. Process until crumbs form (you can also use your hands if you don't have a food processor). Mix them with the sugar and ground almonds.
Place the crumble on top of the fruit and sprinkle with chopped toasted almonds (optional).
Cook for 30/35 minutes or until the cover is well browned and crispy.
Serve it warm or cold with a scoop of ice cream or whipped cream.

Store the dessert covered in the fridge for 3/4 days.
