Plum and Berry Cobbler (Gluten-Free)

GF Plum and Berry Cobbler have a fresh and juicy plum and berry filling and a soft and rich crust. It's delicious! A perfect dessert to share and enjoy with family or friends.

Ingredients
  

For the crust

  • 1 and 1/2 cup GF all-purpose flour
  • 1/2 cup sugar
  • 1 and 1/2 teaspoon baking powder
  • Pinch of salt
  • 2/3 cup milk
  • 1/4 cup butter, melted
  • 2 tablespoons heavy cream for topping
  • 2 tablespoons powdered sugar, for topping

For the filling

  • 1 lb plums (500gr)
  • 1 lb berries (500gr)
  • 3/4 cup brown sugar
  • 2 tablespoons cornstarch

Instructions
 

  • In a medium bowl whisk together the GF all-purpose flour, baking powder, salt, and sugar. Add the melted butter and the milk, and mix until incorporated.
  • Let rest covered in the refrigerator for at least 20 minutes.
  • In a large bowl toss the sliced plums, berries, brown sugar, and cornstarch. Transfer the mixture to a baking dish and let rest.
  • Preheat oven to 375°F.
  • Droop scoops of dough on top of the plum mixture. Divide as evenly as possible, so that every portion has a scoop of dough.
  • Brush the dough with cream and sprinkle with 1 tablespoon of coarse sugar.
  • Bake for 50 minutes or until the crust is golden brown and the filling is bubbling.
  • Serve warm with a scoop of ice cream or whipped cream.
